Triple Peach Champagne Cocktail 🙂 I just love stone fruit… and I try to eat as much as I can during the summer months, so I can get my fill until the next year! I took my four kids, and my neighbors three kiddos to a local market. Yes. I know. I said SEVEN. I’m crazy. Any who… we went to a local market called Mosby’s Farms…. they are FABULOUS! And while I was there I noticed this….
Yes. PEACH bitters. I had actually never heard of such awesomeness before! All I had known was good ole fashioned bitters that you use for manhattans and the like. I was so excited to be exposed to new wonders of Peach Bitters that I could barely contain myself.
The kiddos and I paid for the bitters, fresh honeycomb, gorgeous fruit, and a wickedly awesome ginger ale, and headed home. Unaware of what peach bitters even tasted like… I was already concocting new recipes in my head trying to imagine the flavors.
Oh boy. This stuff is divine.
I bought some fresh peaches and made a simple purée, by blending the peeled fruit with some simple syrup and fresh lemon juice.
On a side note… I just love hummingbirds…. LOL I know, WAY LEFT FIELD on that one!! It ties to this drink, I swear!!! Mr. Jones bought me the best hummingbird feeder and it’s just outside my kitchen window. He’s a fabulous hummingbird daddy and always makes sure that they have fresh food…… which IS simple syrup. It’s the perfect relationship really….. He takes care of the hummingbirds for my enjoyment… and I never have to make simple syrup for recipes because there’s always a fresh batch in the fridge! See….. perfect relationship! Possibly one sided?? lol  I told you there was relevance 😉  Here’s a picture of one of our hummingbirds….. we have so many in our yard, and year round too.
Alright, alright…. back to the recipe.
I used the peach purée, peach schnapps, and the gorgeously fragrant and delicious peach bitters… hence the triple peach 🙂 This drink is sweet and fruity…. and a perfect brunch cocktail!!
- 2 peaches, peeled and pitted
- ¼ cup simple syrup (or more to taste)
- 2 tsp. fresh lemon juice
- 1 sugar cube
- 2-3 drops peach bitters
- 1 oz peach purée
- 1 oz peach schnapps
- champagne
- Place the fruit, simple syrup and lemon juice into a blender and blend until smooth.
- Place sugar cube in bottom of champagne glass. Add bitters, purée and peach schnapps. With the back of a spoon, lightly mash the mixture to break up the sugar cube. Fill glass with champagne. Enjoy!
