Super Easy Chinese Chicken Salad! This recipe came from my Grandma Louise. It’s such an easy and quick recipe to whip up for dinner or for lunch. I just love to make this when it’s nice outside. It’s perfect and light for warmer days :-) I’ll also pack up the ingredients separate for Mr. Jones to take to work…. that way it stays nice and crisp.

Ingredients
For the dressing:
- ½ cup vegetable oil
- 5 Tbs. red wine vinegar
- 4 Tbs. sugar
- ½ tsp. fresh ground pepper
- 1 tsp. salt
For the salad:
- 1 package shredded cabbage with carrots
- ¼ red cabbage, shredded or sliced **omit if buying a package with red cabbage already in it. My grocery store stopped carrying the kind with both green and red in it 🙁
- 3-4 cups cooked chicken, chopped (I use one rotisserie chicken, or 3 boneless chicken breasts.)
- 4 green onion tops, chopped
- ½ - ¾ cup sliced or slivered almonds, toasted
- 3 Tbs. toasted sesame seeds
- 1 package crushed Ramen noodles, discard seasoning packet
Instructions
- In a small bowl, whisk together the dressing ingredients. Or you can also use a tight fitting tupperware container and shake it.
- In a large bowl, combine all the salad ingredients. Pour dressing over salad. Mix well and serve immediately.
