Scalloped Potatoes! Oh my goodness these are heavenly! Super easy to make… but these potatoes have such a finesse to them that you’d think they were super gourmet. The trick to these, is getting your potatoes sliced super thin! I’ve always wanted a mandoline… so this was my big excuse to finally purchase one! 🙂 I found a really nice one that had tons of great reviews on Amazon… and I absolutely love it. If you don’t have a mandoline, you can slice them by hand… but it would take forever. Here’s the link for the one I just bought. You get free shipping too if you have a Prime membership!

Ingredients:
- 2 1/2 pounds russet potatoes, peeled
- 1 1/2 cups heavy cream
- Fresh whole herbs of your choice (I used 2 whole sprigs of thyme and 1 whole sprig of rosemary)
- 1 garlic clove, minced
- 1/2 teaspoon freshly grated nutmeg (If you don’t have fresh you can use regular ground…. but fresh is preferred)
- 3/4 cup Gruyere cheese, shredded and divided
- 3/4 cup Parmesan cheese, shredded and divided
- Salt & Pepper to taste
- Butter
Instructions:
- Preheat your oven to 400 degrees.
- In a small saucepan, combine your heavy cream, sprigs of herbs, garlic, nutmeg, salt and pepper. Heat on low.Â
- Meanwhile, use your awesome mandoline 🙂 to thinly slice your potatoes in a large mixing bowl.
- With a slotted spoon remove the herbs from your cream mixture. Pour the mixture over your sliced potatoes.Â
- Add 1/2 cup Gruyere cheese and 1/2 cup Parmesan. Stir well. Pour this mixture into a buttered baking dish. Level the potatoes for even cooking.Â
- Top with the remaining cheese. Cover loosely with foil and bake for 40 minutes. Remove foil and bake for another 15-20 minutes or until the top is nicely browned and the potatoes are tender. Enjoy!!
