Olive Garden’s Zuppa Toscana Soup!
This soup has been a favorite in our house for a long time! Mr. Jones always asks me to make it for him. I have done different variations of this soup for years. It just depends what mood I’m in I guess? 🙂  Sometimes I’ll make it with cauliflower instead of potatoes for a lighter version. And I always use chicken sausage instead of pork, because it’s leaner. Sometimes I add pepper flakes for a spicier version, etc. Oh! And I always put a TON of kale in it! Any chance I get to sneak kale into my families food I do! I think I put in double what you would see at Olive Garden. Have fun with this soup though! Make it your own!!
Just like Olive Garden’s Zuppa Toscana Soup… but a little leaner and healthier 😛
- ½ pound bacon, chopped
- 1 pound spicy or italian sausage (I always use chicken sausage)
- 2 quarts homemade chicken broth! (please don't use canned... if you don't have homemade, at least use "Better Than Bouillon". It comes in a jar, and you can buy it at Costco or any grocery store. Your tastebuds will thank you! I promise.)
- 1 quart water
- 2-3 russet potatoes, quartered then sliced (I leave the skins on, but feel free to peel if you don't like the skins)
- 1 medium white, yellow or sweet onion, chopped small
- 2 garlic cloves, crushed
- 2 cups (or more!) rinsed and chopped kale (I like the curly kind... but there are lots of varieties to choose from)
- 1 cup heavy cream
- Salt & pepper to taste
- In a large pot cook the bacon until extra crispy on medium-high heat. Drain and set aside. Make sure it's extra crispy or you'll have soggy bacon in your soup.
- In the same pot, over medium-high heat, brown the sausage. Drain and set aside.
- Pour in the homemade chicken broth and water. Scrape up all the delicious brown bits in the bottom of the pot! There's so much flavor in those bits!!
- Add in the potatoes (or cauliflower), onion and garlic. Let simmer until the potatoes (or cauliflower) are tender.
- Add the sausage and bacon back into the pot. Let simmer for 5 minutes.
- Add the kale and cream. Heat through.
- Season with salt and pepper

Serve with grated cheese, salad and bread sticks if you wish! This recipe is gluten free as long as you don’t eat it with breadsticks! lol  Bon Appétit!
