Irish Onion Bacon Slider Burger. Oh my goodness… I am seriously laughing out loud writing this post right now! I decided to make an “Irish Bacon Burger” after remembering that Costco sold a pretzel bun… and I had an abundance of Dubliner cheese that I needed to use. When I got to Costco today, I found that the pretzel buns were slider size… So sliders it is… BUT I had BIG burger in mind. So they turned out like this… maybe sliders on steroids?? ;-) If you can’t tell from the photo… this plate is itty bitty! It’s smaller than a bread plate. I even asked Mr. Jones how many he would eat, before making my burgers…. and he said FOUR! Yeah right. He could only eat one… well one slider and a plethora of kettle potato chips :-) These were so delicious that our eldest two were begging to have them for lunch tomorrow. Job well done in a Mom’s book if you ask me! The burgers were so juicy and tender, the bun soft and chewy, with the sharp taste of irish cheddar, oh my oh my! We will be making these again for sure! And I even got to use my new mandoline again… which I am thoroughly enjoying! I bought mine recently from Amazon, and I’m in love! Click here if you’re in the market for one 🙂
- Pretzel buns (I bought mine at Costco)
- 2 pounds fresh ground beef
- 1 package Lipton Onion Mix
- 1 Tbs. Worcestershire sauce
- 2 Tbs. water
- Thick sliced bacon
- Dubliner cheese, sliced (Dubliner is an Irish Cheddar cheese. You can buy it at Costco or any local grocery store these days.)
- Kosher pickles, sliced thinly lengthwise (I used my mandoline)
- Tomatoes, sliced thinly (I used my mandoline)
- Sweet onions, sliced thinly (I used my mandoline)
- Lettuce
- Thousand Island dressing (I used Litehouse Dressing)
- In a large mixing bowl, combine the ground beef, Lipton Onion Mix, worcestershire and water. Mix well and set aside for the ingredients to meld and the onions in the mix to rehydrate.
- Cook the bacon, until crisp and drain on a paper towel lined plate.
- Slice your cheese, pickles, tomatoes, and onions, and set aside.
- Form your meat into patties. Grill your burgers to your liking. Just before being done, place your Dubliner cheese on top to melt ***Please don't press down on your burgers while they are cooking!! I beg you! You want all of those amazing juices IN your burger, not squeezed out into your grill! I cook to the touch... If you place your left index finger against your left thumb, and then press on the flesh in your palm below your thumb.... that's the perfectly cooked burger! Test that resistance, then slightly press on your burger... if it feels the same, it's done! Take it off the heat and let it rest (meaning don't touch it for at least 5 minutes) and you'll have the juiciest burger ever!
- Slice your pretzel bun in half. On the bottom half, spoon on a bit of Thousand Island Dressing. Top with a burger, and layer on your pickles, tomato, onion and lettuce. Spoon more dressing onto the top part of the bun, and top your burger! Serve with homemade fries or some awesome Kettle Potato Chips!
