Grandma’s chewy oatmeal cookie recipe! These cookies make me think of my childhood. My Grandma Louise would always have a coffee can of these in her freezer! They are huge cookies…. and what kid doesn’t like an enormous cookie?? I made these last night for my four kids… and they devoured them. They are golden brown, crispy on the edges but chewy and soft in the middle! Delish!

Ingredients
- 1½ cup flour
- ¾ tsp. salt
- 1 tsp. baking soda
- 1 cup softened butter (2 sticks)
- 1 cup white sugar
- 1 cup unpacked brown sugar
- 2 eggs
- 1 tsp. vanilla
- 3 cups quick oatmeal
- ½ cup chopped walnuts
- Raisins if using (I add about ½ cup)
Instructions
- Preheat oven to 350 degrees.
- Sift flour, salt and baking soda into a small bowl. Set aside.
- Cream the butter and both sugars. (I use my kitchen aid mixer, but a hand mixer works well too)
- Then add both eggs. Mix until light and fluffy.
- Stir in vanilla.
- Add your bowl of dry ingredients. Mix until incorporated.
- Add in one cup of oatmeal at a time. Mix until incorporated.
- Add in walnuts and raisins, if using.
- Place large globs of dough on an un-greased baking sheet. (I made mine about the size of a mandarin orange... maybe 3-4 tablespoons??) This will fill up your cookie sheet quickly. I typically only get 8 cookies on one sheet.
- Bake for 14-17 minutes. Make sure you check them at 14 minutes!! You want them only ½ baked but to hold their shape! You'll get hard, crispy cookies if you over bake them.
- Place them on a cooling rack and let cool. Dig in!!!
