Sliced almonds if making sand dollar cookies, or colored sugar for decorating if making regular cookies.
Instructions
Preheat oven to 375 degrees.
In a small bowl mix together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl, cream together your sugar and butter until light and fluffy.
Add in your egg and vanilla.
Slowly add in the dry ingredients. The dough will be very dry.
Mix in the buttermilk.
Roll dough into small balls... I make mine about the size of a small golf ball. Place dough onto an ungreased baking sheet. Lightly press down on the dough to barely flatten them. Sprinkle with sugar or sprinkles if using.
Bake for 8-10 minutes, or until lightly golden on the edges. If you're making sand dollar cookies... immediately place your sliced almonds in a star pattern on the cookies. Gently press them into the cookie. Let cool on a cookie rack. Serve your cookies in a bed of brown sugar to look like sand! So cute!!
