Delicious oven roasted tomatoes! Oh my goodness….. if you could smell the aroma in my kitchen right now!!! It makes you want to grab some crusty bread and dig in! “Oh no!” is what my bestie would say! LOL She always says that when I cook something super yummy… as in “oh no… I can’t stop eating it!” It cracks me up, because I could hear her saying it as I pulled these out of the oven 🙂 Roasted tomatoes are so delicious it’s almost sinfully good! But the best thing about them is that they are ridiculously easy to make. You can also do so many things with them. Put them on sandwiches, pizzas, make homemade tomato sauce, homemade soup and more!
I typically roast tomatoes a lot during the summer when I have an abundance of them. But this week, Mr. Jones went to the grocery store after I did…. and we both bought tomatoes. So what should I do?? Roast tomatoes of course!!
Ingredients:
- Tomatoes (just use enough to fill up whatever baking pan you are using)
- 1/2 cup Olive oil
- 3 Tbs. Balsamic Vinegar
- 1 Tbs. Sugar (I use turbinado sugar, which is raw sugar. But you can also use brown or white sugar)
- 4-5 cloves Garlic, chopped
- 1/2 cup of your favorite fresh herbs (I used basil and thyme, because it’s what I had on hand)
- Salt & Fresh Ground Pepper
Instructions:
Pre-heat your oven to 350 degrees.
Place your tomatoes in an oven safe baking dish. Grab a small bowl and add your olive oil and balsamic vinegar.
Next add in your sugar. I love the big pieces of the turbinado sugar!
Next chop up your garlic and add to the oil mixture.
Whisk your oil mixture together with a small whisk or with a fork.
Now chop up the herbs you are using. I always use basil in my oven roasted tomatoes! Then I’ll add whatever looks good in my garden. Today I used thyme.
Sprinkle them over the tomatoes!
Now drizzle the olive oil mixture over the top.
Season generously with coarse sea salt and fresh ground pepper!
Now pop her in the oven for 60-80 minutes! Mine weren’t quite done at 1 hour so I left them in for an additional 15 minutes.
Oh my goodness… are you ready for this?? It smells divine!!!! Remove any stems and you are ready to feast!!
