Creamy Red Potato Salad. I just love a good, homemade potato salad! Especially during beautiful weather while barbecuing with my family 🙂 I really like this recipe because I usually have all the ingredients readily available in my fridge. You’ll be able to whip this up in no time! Bon Appétit!

Ingredients
- 2.5 pounds red potatoes, cut into bite size pieces
- 1 cup sour cream
- ¼ cup mayonnaise
- 4 hard boiled eggs, chopped (make sure to click HERE for my amazingly easy to peel hard boiled egg recipe!)
- 1 cup celery, chopped
- ½ cup parsley, chopped
- ½ cup green onion, chopped
- 1 Tbs. Dijon mustard
- 1 tsp lemon pepper
- 1-2 Tbs. Lawry's or Johnny's seasoning salt (start with one Tablespoon and taste, add more as needed)
Instructions
- In a large pot, boil red potatoes until fork tender. Drain and set aside.
- In a large bowl, combine the remaining ingredients. Gently mix in the warm potatoes. Immediately serve warm or at room temp, or chill in the refrigerator and serve cold. Enjoy!!
