Cheesy Parmesan Onion Potatoes! These are the easiest things to make!! It’s really not MY recipe… as all I do is add parmesan and slightly tweak the recipe on the box… but it’s oh so good that I had to post it! We love to eat these as a side dish… or even as the main dish with a yummy salad to go with it. PLUS the leftovers are fabulous for breakfast! Just heat up and serve with eggs and toast. 🙂
Ingredients:
- 8-10 red potatoes, chopped into bite size pieces
- 1 package Lipton Onion Mix
- 1/3 cup olive oil
- 3/4 cup parmesan cheese, shredded
Instructions:
- Preheat oven to 425 degrees
- In a large ziplock bag, combine the potatoes, onion mix, olive oil and cheese. Leaving air in the bag, seal the bag. Shake until well combined.
- Pour into a 13 x 9 pyrex dish and bake uncovered for 30-45 minutes. Or until potatoes are fork tender, soft and cooked through. Baking time will vary with how big you cut your potatoes. Serve by themselves, or garnish with sour cream and green onions 🙂
