Oh so easy… baked oatmeal! It’s so delicious…. almost like taking a bite of a warm, just out of the oven, buttery, chewy, oatmeal cookie. It’s perfect for a lazy weekend breakfast or a brunch for that matter. Baked Oatmeal is also insanely versatile. You can add whatever you like really…. pecans…. ooooh maybe candied pecans!! 🙂 Walnuts, flaxseeds, dried cranberries, raisins, apples, bananas, blueberries….. or maybe bananas AND blueberries! You get my drift. You can add whatever you’d like to this simple and delicious breakfast. I also love baked oatmeal because its a “stick-to-your-ribs” kind of breakfast for my kids. Unlike cereal, it keeps them full longer and I don’t get the, “Mom can I have a snack?” question 10 minutes after breakfast. Well… okay… maybe not 10 minutes… more like and hour. But it always feels like 10 minutes!! lol  Plus, regular oatmeal for some reason just seems boring. Kind of blah. Baked oatmeal kicks it up to another level… revamps it, I guess??
- 4 cups Old Fashioned Oats (not the quick kind!!)
- 3 tsp baking powder
- 1 tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg (fresh preferably)
- 3 eggs
- 1⅓ cups milk
- ½ cup butter, melted
- ¼ cup honey (tip: local honey keeps your allergies in check!)
- ⅓ cup brown sugar
- 1 tsp vanilla extract
- Preheat the oven to 350 degrees.
- Butter an oven safe, 2 quart dish. Set aside. (I used a round 2 quart dish)
- In a large bowl, combine the oats, baking powder, salt, cinnamon and nutmeg. Set aside.
- In a medium bowl, combine the eggs, milk, melted butter, honey, sugar and vanilla. Mix well and pour into the large bowl of dry ingredients. Mix until completely incorporated.
- Pour mixture into the buttered dish and bake for 30 minutes. Let cool for 5 minutes. Serve warm with milk or cream, and whatever other topping you'd prefer. Enjoy!
