Baked Honey Dijon Salmon! I just love salmon, and living in the beautiful Puget Sound of the Northwest we have an abundance of it! Salmon is such a versatile fish and can be cooked so many ways. I love this Baked Honey Dijon recipe because it takes minutes to make and the kids love it! Plus, they love the fact that there’s crunchy cornflakes on top! :-)
- 1½ pounds Salmon fillet (I used Wild King Salmon)
- 3 Tbs. Dijon mustard
- 1 Tbs. Honey
- 1 Garlic clove, minced
- 1 cup Cornflakes, crumbled (I used Kelloggs Cornflakes)
- 2 Tbs. Butter, softened
- ¼ cup Parsley, chopped
- Preheat oven to 400 degrees.
- In a small bowl, stir together the dijon, honey and garlic. Set aside.
- In another small bowl, mix together the cornflakes, butter and parsley.
- Place your salmon, skin side down, in a baking dish.
- Spoon the mustard mixture on top of the salmon.
- Top with the crumb mixture.
- Bake for 15-20 minutes, or until the salmon is just flakey. Let sit for 5 minutes and serve. 🙂

I’m always looking for new ways to make salmon. This was very tasty. I used corn flake crumbs instead of crushed cornflakes, as that’s what I had on hand. I’ll be making this again.
