Cinco de Mayo is just a few days away… what’s better than Authentic Homemade Street Tacos?!! You can wow your guests with authentic homemade Mexican food that takes minutes to make. I have a secret weapon… lol It’s called my local Mexican MARKET!! If you’ve never shopped there before…. oh my goodness… you’re in for a treat. Typically the prices are unbeatable, and you’ll find everything you need to whip up an amazing feast that will amaze your family and friends. For instance, yesterday, I went to my favorite market in Kent, WA. It’s called La Huerta International Market. Tomatoes on the vine were only .89 cents per pound!! On sale, at Fred Meyers, they are $1.48 per pound… which is typically a very good deal. Spices are always incredibly cheap at Mexican markets. I bought a 12.5 ounce container of ground Cumin yesterday for only $3.99! That’s less expensive than what it costs for a 1.9 ounce at the grocery store and it’s 6 times the amount. Besides the amazing prices…. they have things that your regular grocery store won’t. Like fresh, hot, homemade tortillas! I bought the small taco sized tortillas yesterday. They were so soft and delicious. They also have amazing meats…. and pre-marinated meats!! I bought 2 pounds of marinated adovada (sometimes spelled adobada) pork for my tacos… as well as some fresh Crema (sour cream) and Cotija cheese!
Ingredients (Serves 8):
- Fresh white corn tortillas
- 1 Tbs. vegetable oil
- 2 pounds marinated pork, beef, or chicken
- 1 bunch Fresh cilantro, chopped
- 1 Onion, chopped
- Lime wedges
- Cotija cheese, grated
Instructions:
- In a large sauté pan, heat 1 Tbs. vegetable oil, cook the marinated meat until cooked through.
- Meanwhile warm your tortillas. I wrap mine in a kitchen towel and microwave them for 30-45 seconds.
- On each tortilla, add some meat, onions, cilantro, Cotija cheese and a squeeze of lime juice.
- Serve with some fresh Pico de Gallo, Crema (or sour cream), fresh guacamole, and hot sauces on the side. And don’t forget a good Mexican beer or a Margarita!! 🙂
